Tomato & bacon meat pies

Homemade meat pies are easier than you think with a few shortcuts. Skip the store-bought and enjoy delicious pies made from scratch.
Ingredients:
  • 18.20 gm olive oil
  • 2 brown onions, chopped
  • 250g short cut rindless bacon, chopped
  • 750g lean beef mince
  • 350g jar roasted tomato pasta sauce
  • 125.00 ml chopped fresh continental parsley
  • 2 (25cm x 25cm) sheets frozen ready rolled shortcrust pastry, thawed
  • 2 (25cm x 25cm) sheets frozen ready rolled puff pastry, thawed
  • Tomato sauce, to serve
  • Salad, to serve
Instructions:
  • In a large saucepan over medium heat, sauté onion and bacon until soft, about 4-5 minutes. Then add the mince and cook for an additional 5 minutes.
  • Combine the pasta sauce and parsley into the mixture. Simmer and stir for 5 minutes. Remove from heat and set aside to cool.
  • Preheat the oven to 200°C. Lightly grease 8 small pie dishes. Cut out 8 circles measuring 12.5cm from the shortcrust pastry and use them to line the dishes.
  • Evenly distribute the mince mixture into the pastry cases. Moisten the pastry edges with water. Cut out 8 circles of puff pastry (10cm each) and place over the pies. Seal by pressing the edges together. Brush the tops with beaten egg. Bake for 25-30 minutes. Enjoy with sauce and salad.
