Lazy Polish-inspired beef and cabbage bake with rice and tomatoes.
Ingredients:
  • 1 head green cabbage, cut into bite-size pieces
  • 1 pound ground beef
  • 1 teaspoon salt
  • 1 teaspoon dried parsley
  • 0.25 teaspoon onion powder
  • 0.125 teaspoon ground black pepper
  • 2 cups water
  • 1 cup white rice
  • 1 (10.75 ounce) can condensed tomato soup (such as Campbell's®)
  • 1 (32 ounce) container crushed tomatoes (such as Hunt's®)
Instructions:
  • Simmer cabbage in a flavorful broth until it's easily pierced with a fork, about 10 to 15 minutes. Drain thoroughly.
  • 1. Preheat a large skillet over medium-high heat. Brown the beef until crumbly, about 5 to 7 minutes. Drain excess grease. Stir in salt, parsley, onion powder, and black pepper.
  • In a saucepan, bring water and rice to a boil. Then simmer, covered, over medium-low heat for 20 to 25 minutes until the rice is tender and liquid is absorbed. In a bowl, combine tomato soup and crushed tomatoes.
  • Preheat your oven to a toasty 350 degrees F (175 degrees C).
  • Mix the cabbage, well-seasoned ground beef, rice, and tomato mixture in a bowl, then transfer everything to a 9x13-inch baking dish.
  • Cook in the hot oven until bubbly, approximately 45 minutes.
