Beef and cabbage stir-fry

Savor a bowl of flavorful Asian-inspired rice with savory minced meat using chopsticks.
Ingredients:
  • 36.40 gm peanut oil
  • 1 onion, finely chopped
  • 3 sticks celery, finely diced
  • 750g lean beef mince or pork mince
  • 45g packet chicken noodle soup
  • 100.00 gm white long-grain rice, raw
  • 20.00 gm curry powder
  • 510.00 gm chicken style liquid stock
  • 250.00 gm water
  • 1 mini cabbage, core removed and finely shredded (see variation)
  • Chinese fried noodles (optional)
Instructions:
  • In a large frying pan or wok over medium-high heat, heat oil. Add onion and celery, then cook for 2 to 3 minutes. Next, add mince and cook for 4 to 5 minutes, breaking it up with a wooden spoon.
  • Combine soup, rice, curry powder, chicken stock, and water in a pot. Season with salt and pepper. Stir well and bring to a boil. Simmer covered on medium-low heat for 25 minutes.
  • Uncover and evenly distribute shredded cabbage over the mince mixture. Let it cook, covered, for 3 to 4 minutes. Remove from heat, mix in the cabbage, and serve hot, garnished with Chinese fried noodles.
