Delicious one-pot meal: Ground beef and egg noodle skillet ready in 25 minutes!
Ingredients:
  • 3 cups uncooked wide egg noodles (6 oz)
  • 1 lb lean (at least 80%) ground beef
  • 2 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup milk
  • 1 container (16 oz) reduced-fat sour cream (about 2 cups)
  • 3 tablespoons chopped fresh parsley
  • 2 teaspoons poppy seed
Instructions:
  • Prepare noodles according to package instructions, then drain and cover to stay warm.
  • In a 10-inch skillet, brown the ground beef over medium-high heat for 5 minutes, stirring frequently. Drain any excess fat. Add garlic and cook over medium heat for 1 to 2 minutes, stirring occasionally, until the beef is fully cooked.
  • Lower the heat to medium-low. Add the cheese and milk, and cook for 5 to 6 minutes, stirring often until heated through. Stir in the sour cream, cooked noodles, parsley, and poppy seed. Cook for an additional 1 to 2 minutes, stirring frequently until heated through.
