Beef with pak choi, mushrooms and noodles

Delicious and aromatic beef and pak choi noodles for fans of spicy flavors
Ingredients:
  • 75 g thin rice noodles
  • 115 g quality beef sirloin
  • sea salt
  • ½ red onion finely sliced
  • 1 thumb-sized piece fresh ginger peeled and finely sliced
  • 1 fresh red chilli deseeded and finely sliced
  • 1 small handful shiitake and oyster mushrooms brushed clean and torn up
  • 200 ml organic chicken stock
  • 1 pak choi quartered
Instructions:
  • 1. Boil the kettle and cook noodles according to packet instructions. While noodles soak, coat beef with olive oil, cumin, and a pinch of salt. Sear beef in a hot pan on all sides, then add onion, ginger, and chili. Cook briefly before adding mushrooms, stock, and pak choi. Drain noodles and mix into the pan. Season to taste. Serve beef slices on top of noodles and pak choi. Pour pan broth over the dish.
