Protein-packed beef jerky trail mix with a perfect balance of sweet and salty flavors for a delicious and satisfying snack on the go.
Ingredients:
  • 1 cup unsweetened flaked coconut
  • 20 ounces roasted mixed nuts
  • 2 (2.9 ounce) packages beef jerky, chopped
  • 0.5 cup raw pumpkin seeds
  • 3 ounces dried cranberries
  • 3 ounces dried apricots, chopped
Instructions:
  • Toast coconut in a large skillet on low heat for about 5 minutes until golden brown. Allow to cool before using.
  • Combine nuts, jerky, pumpkin seeds, cranberries, and apricots in an airtight container. Shake well to mix. Then add cooled coconut and shake again.
