Elevate your weeknight menu with a fusion dish of meaty curry and crispy tostadas, blending Indian and Mexican flavors.
Ingredients:
  • 500g pkt One Pot Beef Madras
  • 1 brown onion, chopped
  • 4 tortillas
  • 250g pkt microwavable basmati rice
  • 125.00 ml shredded red cabbage
  • 95g yoghurt
  • 62.50 ml coriander sprigs
  • 1 long red chilli, thinly sliced (optional)
Instructions:
  • Preheat your oven to a toasty 200°C.
  • Begin by heating a large heavy-based saucepan over medium heat. Add the beef mixture and cook, stirring, until it browns, for approximately 3-5 minutes. Then add the onion and continue to cook and stir until the onion softens, which should take about 2 minutes. Next, add the tomato and 2 cups (500ml) of water. Bring the mixture to a boil, then reduce the heat to medium-low. Let it cook, stirring occasionally, for around 1 1/2 hours until the beef is tender and the sauce thickens.
  • Prepare a baking tray by lining it with baking paper, then arrange the tortillas in a single layer on the tray. Lightly coat them with olive oil spray. Bake for 6-8 minutes, turning them over halfway through, until they are a light golden color.
  • Prepare the rice according to the instructions on the packet.
  • Assemble the dish by layering tortillas on plates and topping them with rice, beef mixture, cabbage, yogurt, coriander, and chili (optional). Don't forget to season to taste.
