Ingredients:
  • 800g beef topside steak or beef rump steak, trimmed
  • 56.00 gm madras curry paste
  • 4 pieces naan bread
  • Olive oil cooking spray
  • 165.00 ml reduced-fat natural yoghurt
  • 31.50 gm lemon juice
  • 100g baby spinach leaves
Instructions:
  • Begin by soaking skewers in a shallow dish of cold water for 30 minutes. Then, drain them and cut the beef into 2.5cm cubes. Toss the beef in curry paste until coated, then thread it onto the skewers. Place the skewers on a plate, cover them, and refrigerate for 1 to 2 hours, if possible.
  • Heat the chargrill or barbecue grill on high until hot, then reduce to medium heat. Lightly oil both sides of the naan bread and grill for 1 minute on each side. Transfer to a plate and keep warm by covering with foil.
  • Coat skewers lightly with oil and grill for 5 minutes, turning occasionally, until fully cooked.
  • Mix the yogurt and lemon juice together. Serve the naan bread on plates, then add the spinach and skewers on top. Drizzle with the yogurt mixture and enjoy!
