Delicious and hearty Indian beef madras with fragrant spices, served with fluffy rice and fresh tomato-onion salad.
Ingredients:
  • 18.40 gm vegetable oil
  • 750g gravy beef, trimmed, cut into 3cm pieces
  • 2 garlic cloves
  • 2cm piece fresh ginger, peeled, grated
  • 20.00 ml ground coriander
  • 2.50 gm ground cumin
  • 1 tsp ground turmeric
  • 1/4 tsp dried chilli flakes
  • 69.38 gm tomato paste
  • 510.00 gm beef stock
  • Steamed Basmati rice
  • Salad (see note), to serve
Instructions:
  • In a large saucepan over medium-high heat, heat oil. Brown beef in batches for 2 to 3 minutes. Return all beef to the pan.
  • Sauté the garlic, ginger, coriander, cumin, turmeric, and chili for 1 minute until fragrant. Stir in the tomato paste and stock, bring to a boil, then reduce heat and simmer covered for 30 minutes. Uncover and simmer for 30 more minutes until beef is tender and sauce thickens. Serve with rice and tomato-onion salad.
