Craft a fragrant Madras beef curry for exotic Indian flavors at home.
Ingredients:
  • 40.00 ml ground coriander
  • 10.00 gm ground cumin
  • 1 tsp turmeric
  • 1/2 tsp freshly ground black pepper
  • 1 tsp chilli powder (optional)
  • 2 garlic cloves, crushed
  • 2 tsp grated ginger
  • 52.50 gm lemon juice
  • 36.40 gm Classic Olive Oil
  • 1kg beef chuck steak, cut into 2.5cm cubes
  • 44.40 gm Tomato Paste
  • 255.00 gm beef stock
  • Steamed Basmati rice, to serve
  • Raita (see notes), to serve
  • Coriander, to serve
  • Mint, to serve
  • Sliced red chilli, (optional) to serve
Instructions:
  • Mix together coriander, cumin, turmeric, pepper, chili, garlic, ginger, and lemon juice in a bowl until a flavorful paste forms. Reserve for later use.
  • In a large saucepan over high heat, sizzle 1 tablespoon of oil. Add half of the beef, cook while stirring for 2 to 3 minutes until beautifully browned. Transfer to a bowl and repeat the process with the rest of the oil and beef.
  • - Lower the heat to medium, then add the flavorful spice paste and cook for 1 minute. - Gently bring back the beef to the saucepan and stir, ensuring the meat is coated with the paste. - Introduce the tomato paste and stock, bringing the mixture to a boil. - Decrease the heat to low, cover and let it simmer for 1 hour and 45 minutes until the beef is wonderfully tender.
  • Uncover and cook for 15 more minutes until the sauce has slightly thickened. Serve with rice and raita, and garnish with mint, coriander, and fresh chilli if desired.
