Get ready for a delicious winter stew!
Ingredients:
  • 750g gravy beef, trimmed, cut into 3cm cubes
  • 1 large brown onion, finely chopped
  • 3cm piece fresh ginger, peeled, grated
  • 87.50 gm madras curry paste
  • 4 cardamom pods, bruised
  • 255.00 gm chicken style liquid stock
  • 400g can diced tomatoes
  • 500g sweet potato, peeled, cut into 3cm cubes
  • 50g baby spinach
  • Steamed Basmati rice, to serve
Instructions:
  • Preheat the oven to 180°C/160°C fan-forced. Heat half the oil in a large casserole dish over medium-high heat. Brown the beef in batches for 5 to 6 minutes, then transfer to a bowl.
  • Heat the rest of the oil in the dish then add onion, garlic, and ginger. Sauté for 5 minutes until onion softens. Stir in curry paste and cardamom, cooking for 1 minute until fragrant. Add back the beef, pour in stock, tomatoes, and potatoes, cover, and bring to a boil.
  • Place the mixture in the oven and bake until the beef is tender, for about 2 hours. Once ready, discard the cardamom, add the spinach, and serve with rice.
