Savor a delectable roast beef with savory mushroom gravy, seasoned with onion soup mix and beef broth.
Ingredients:
  • 1 (3 pound) sirloin tip roast
  • 4 (8 ounce) cans mushroom stems and pieces, drained
  • 1 cup beef broth
  • 1 envelope onion soup mix
  • 3 tablespoons cornstarch
  • 0.25 cup beef broth
Instructions:
  • Preheat the oven to 350°F (175°C) for the perfect baking temperature.
  • In a Dutch oven or heavy pot over medium-high heat, sear the roast in vegetable oil until nicely browned on both sides, approximately 10 minutes. Add mushrooms and 1 cup of beef broth, then sprinkle with onion soup mix.
  • Bake the roast in the preheated oven until it reaches an internal temperature of 145 degrees F (65 degrees C for medium doneness, about 90 minutes. Once done, transfer the roast from the Dutch oven to a platter, cover it with a double sheet of aluminum foil, and let it rest in a warm area for 10 to 15 minutes before slicing.
  • Combine cornstarch with the rest of the beef broth, mix well, and add to the Dutch oven along with mushrooms and pan drippings. Bring to a boil over medium-high heat, stirring constantly until thickened, for about 2 minutes. Serve over sliced beef.
