Beef-Mushroom Teriyaki Noodles

Quick and delicious Asian one-pot meal for four ready in just 20 minutes.
Ingredients:
  • 5 cups uncooked fine egg noodles (8 oz)
  • 2 green onions
  • 1 tablespoon vegetable oil
  • 1 package (8 oz) sliced fresh mushrooms (about 3 cups)
  • 1 cup julienne carrots (from 10-oz bag)
  • 1 cup red bell pepper strips
  • 1 lb boneless beef top sirloin, cut into thin bite-size strips
  • 1/2 cup teriyaki marinade and sauce (from 10-oz bottle)
  • 2 teaspoons cornstarch
Instructions:
  • Prepare and cook noodles according to package instructions.
  • Diagonally slice the onions, setting the green tops aside. Heat oil in a 12-inch nonstick skillet over medium-high heat. Cook mushrooms, carrots, peppers, and the white portion of the onions in the oil for 5 minutes until soft, stirring occasionally. Transfer the mixture to a bowl and cover to keep warm.
  • Cook the beef in the same skillet for 1 to 2 minutes until it just starts to brown; then drain any excess fat. Combine teriyaki marinade and cornstarch in a small bowl. Add the teriyaki mixture and mushroom mixture to the skillet. Cook over medium heat, stirring constantly, until the sauce thickens.
  • Combine the beef mixture and reserved green onion tops with the noodles in a large serving bowl. Serve promptly.
