Beer and honey slow-cooked lamb, creamy mashed potatoes, and sautéed veggies - perfect for a crowd.
Ingredients:
  • 18.20 gm extra virgin olive oil
  • 2.4kg Lamb Leg Whole Roast
  • 2 bunches spring onions, trimmed, halved lengthways
  • 10cm-piece ginger, sliced
  • 330ml btl lager beer
  • 1l chicken stock
  • 80ml honey
  • Mashed potato, to serve
  • Spring onion, extra, sliced, to serve
  • Sautéed kale, to serve
  • Baby broccoli, to serve
  • Chilli, to serve
Instructions:
  • In a large saucepan over medium-high heat, sizzle the oil. Brown the lamb for 5 minutes on each side until perfectly golden. Plate and set aside.
  • Place halved spring onion and ginger in a pan and cook until vegetables start to brown, about 3 minutes. Pour in beer and let it reduce by half over 5 minutes. Stir in stock and honey, bring to a boil. Return lamb to the pan, cover, and simmer over low heat for 3 hours until tender. Let it cool for 10 minutes before serving.
  • Garnish mashed potatoes with freshly sliced spring onions. Enjoy alongside succulent lamb and colorful vegetables.
