Elevate your home cooking by whipping up crispy beer-battered calamari, perfect for any gathering. Customize with shrimp, fish, or vegetables for a tasty twist.
Ingredients:
  • 1 lb fresh squid bodies
  • 2 cloves garlic, chopped
  • 1/2 teaspoon lime juice
  • 1/2 teaspoon salt
  • Freshly ground black pepper to taste
  • 2 cups Gold Medal™ all-purpose flour
  • 1 tablespoon olive oil
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon ground red pepper (cayenne)
  • 1 cup cold regular or nonalcoholic beer
  • Vegetable oil for deep frying
  • 1 cup mayonnaise
  • 1 clove garlic, peeled
  • Juice of 1/2 lemon
  • Salt and black pepper to taste
  • 2 tablespoons chopped fresh basil leaves
Instructions:
  • Begin by cleansing the squid meticulously and gently patting it dry. Proceed to slice it into 1/4-inch rings and transfer to a medium bowl. Introduce 2 cloves of chopped garlic, lime juice, 1/2 teaspoon of salt, and black pepper to taste. Mix well to ensure all the flavors meld together. Cover and let it marinate in the refrigerator for a minimum of 30 minutes.
  • In a large mixing bowl, combine 1 cup of flour, olive oil, 1 1/2 teaspoons of salt, and adjust the red pepper and black pepper to your taste. Gradually pour in the beer while stirring gently until the batter is smooth. Cover and refrigerate for 30 minutes.
  • Combine mayonnaise, garlic, and lemon juice in a food processor. Pulse until garlic is finely chopped and mixture is well blended. Transfer the mixture to a small bowl and season with salt and black pepper, then stir in basil. Refrigerate until ready to serve.
  • Heat 2 inches of vegetable oil in a deep fryer or heavy saucepan to 375°F. Place 1 cup of flour in a shallow bowl. Coat squid rings with flour, dip in beer batter, and fry in batches until deep golden brown, about 2 minutes. Drain on paper towels.
  • Present the calamari piping hot alongside zesty Garlic-Lemon Mayonnaise.
