Beer-Battered Squash Chips with Lemon Mayonnaise

Delicious beer and red pepper seasoned summer squash chips served with zesty lemon mayo in just 20 minutes.
Ingredients:
  • 1/2 cup mayonnaise
  • 1 tablespoon lemon juice
  • 2 cups Gold Medal™ all-purpose flour
  • 3 teaspoons baking powder
  • 1 teaspoon table salt
  • 1/4 teaspoon ground red pepper (cayenne)
  • 1 bottle or can (12 oz) dark beer, chilled
  • Vegetable oil for deep frying
  • 2 zucchini or yellow summer squash, cut into 1/2-inch slices
  • Coarse sea salt, if desired
Instructions:
  • Combine the mayonnaise and lemon juice in a small bowl; let it sit aside.
  • Combine flour, baking powder, table salt, red pepper, and beer in a medium bowl and whisk until smooth.
  • Heat a generous amount of oil in a 5-quart Dutch oven or heavy saucepan until it reaches 350°F. Dip squash slices in batter in small batches and fry for about 2 minutes until they turn golden brown. Drain on paper towels and sprinkle with sea salt before serving.
  • Enjoy the hot fried squash chips with zesty lemon mayonnaise.
