Beer-Cheese Kielbasa with Tortellini

Ingredients:
  • 1 package (9 oz) refrigerated three-cheese tortellini
  • 3/4 cup water
  • 1/3 cup all-purpose flour
  • 1 cup light beer
  • 1/3 cup sliced green onions with tops
  • 3 tablespoons chili sauce
  • 2 teaspoons ground mustard
  • 1 package (14 oz) cooked kielbasa or other smoked sausage, cut diagonally into 1-inch-thick slices
  • 1 1/2 cups shredded Cheddar cheese (6 oz)
  • 2 tablespoons diced roasted red bell peppers (from a jar)
Instructions:
  • Fill a 12-inch nonstick skillet halfway with water (approximately 6 cups) and bring it to a boil. Add tortellini and cook uncovered for the specified minimum time on the package, stirring occasionally. Drain the cooked tortellini.
  • Combine 3/4 cup water and flour in a measuring cup until smooth. Pour the mixture into the skillet. Add beer, green onions, chili sauce, mustard, and salt. Bring to a boil, then simmer for 1 minute until thickened, stirring constantly.
  • Carefully incorporate the tortellini and kielbasa into the mixture. Cover and simmer over medium-low heat for approximately 5 minutes or until the kielbasa is heated through.
  • Gradually add 1/2 cup of cheese at a time, gently folding until melted. Take off the heat and garnish with roasted peppers.
