Vibrant beet hummus, a delightful twist on traditional hummus made with cooked red beets, tahini, lemon, and garlic. Perfect for dipping pita chips or veggies!
Ingredients:
  • 1/2 pound beets (about 4 medium sized beets), scrubbed clean, cooked, peeled, and cubed*
  • 2 Tbsp tahini sesame seed paste
  • 5 Tbsp lemon juice
  • 1 small clove garlic, chopped
  • 1 Tbsp ground cumin
  • 1 Tbsp lemon zest (zest from approx. 2 lemons)
  • Generous pinch of sea salt or Kosher salt
  • Fresh ground pepper to taste
Instructions:
  • To cook the beets, remove tops, scrub roots, and roast in a covered dish with 1/4 inch water at 375°F until easily pierced with a knife. Alternatively, simmer in a saucepan with water until tender for about 30 minutes. Peel after cooling.
  • Create a vibrant beet dip: Combine all ingredients in a food processor or blender until creamy. Adjust seasonings to taste. Chill in the fridge for up to 3 days or freeze for later enjoyment. Serve with pita chips, sliced cucumber, celery, or on a crostini with goat cheese and fresh mint.
