Indulge in a delightful Sunday morning treat with this delicious recipe.
Ingredients:
  • 250.00 ml natural muesli
  • 57.20 gm honey
  • 250.00 ml plain flour
  • 8g sachet instant dry yeast
  • 10.00 gm caster sugar
  • 30g butter, chilled, chopped
  • 165.00 gm strawberry jam
  • 150g fresh strawberries, thinly sliced
  • 100g fresh blueberries or frozen blueberries
  • 50g fresh raspberries or frozen raspberries
  • Icing sugar mixture, to serve
  • Tamar Valley Greek Style Yoghurt, to serve
Instructions:
  • Mix together the muesli and honey in a bowl.
  • Preheat the oven to 220°C. In a bowl, sift flour and add yeast, sugar, and butter. Rub the butter into the flour mixture with your fingertips until it resembles breadcrumbs. Pour in 1/2 cup of warm water and mix until the dough comes together, adding more water if needed. Turn the dough out onto a lightly floured surface and knead for 8 minutes until elastic. Place the dough in a lightly oiled bowl, cover with plastic wrap, and set aside in a warm place for 25 to 30 minutes until doubled in size.
  • Grease a large baking tray and sprinkle flour on a clean surface. Roll out the dough into a 2cm-thick, 20cm x 30cm rectangle. Transfer the dough to the tray. Spread jam on top, then add fruit and muesli. Bake for 15 minutes until crispy. Sprinkle with icing sugar and serve with yogurt.
