Ingredients:
  • 3 medium ripe bananas, mashed
  • 1 large ripe banana, mashed
  • 0.33333334326744 cup butter, melted
  • 1 teaspoon vanilla extract
  • 0.75 cup dark brown sugar
  • 0.75 cup all-purpose flour
  • 0.75 cup whole wheat flour
  • 1 teaspoon baking powder
  • 0.75 teaspoon ground cinnamon, or more to taste
  • 0.25 teaspoon ground nutmeg, or more to taste
  • 0.25 teaspoon salt
Instructions:
  • First, preheat your oven to a perfect 350 degrees F (175 degrees C). Then, prepare a 12-cup muffin tin by greasing it generously or lining the cups with paper liners.
  • In a bowl, blend together ripe bananas, melted butter, an egg, and vanilla extract. Sift in brown sugar, stir until fully combined, and set aside.
  • In a separate bowl, combine all-purpose flour, whole wheat flour, baking powder, baking soda, cinnamon, nutmeg, and salt by sifting them together. Gently fold the flour mixture into the banana mixture, making sure not to overmix.
  • Distribute the batter evenly among the muffin cups.
  • Bake in the preheated oven for 20 to 27 minutes, until tops spring back when lightly pressed. Remove from the muffin tin and allow to cool.
