Cheesy bacon and egg breakfast quesadilla for a delicious morning treat.
Ingredients:
  • 3 slices bacon, cooked and crumbled
  • 2 (8 inch) flour tortillas
  • 1 teaspoon butter, softened, or to taste
  • cooking spray
  • 0.5 cup shredded Colby-Jack cheese
Instructions:
  • In a small bowl, combine cracked eggs and crumbled bacon by whisking until fully incorporated.
  • Grease a large skillet with cooking spray and heat over medium-high heat. Add the egg mixture and cook, stirring, until the eggs are fully set, about 5 minutes. Take the skillet off the heat.
  • Spread a delicate layer of butter on one side of all the tortillas.
  • Preheat an empty skillet over medium-low heat.
  • In a warm skillet, lay down one tortilla with the buttered side facing down. Spread half of the scrambled egg mixture on one half of the tortilla. Add 1/4 cup of Colby-Jack cheese on top and fold the tortilla over. Cook until crispy and cheese is melted, about 2 to 3 minutes. Repeat for the second quesadilla.
