Delicious chicken croquettes with savory onion, celery, and spices. Pan-fried to perfection and served with a creamy sauce.
Ingredients:
  • 1.5 cups finely chopped, cooked chicken meat
  • 1 (10.5 ounce) can condensed cream of chicken soup, divided
  • 0.25 cup Italian-style dry bread crumbs
  • 2 tablespoons minced celery
  • 1 tablespoon minced onion
  • 0.25 teaspoon poultry seasoning
  • 0.5 cup Italian-style dry bread crumbs, for rolling
  • 1 tablespoon butter
  • 0.5 cup milk
  • 0.125 tablespoon poultry seasoning
Instructions:
  • Mix together chicken, 1/3 cup condensed soup, bread crumbs, celery, onion, and 1/4 teaspoon poultry seasoning in a large bowl until well combined. Shape the mixture into 6 croquettes (or patties) and chill in the refrigerator for approximately 1 hour.
  • Coat croquettes in extra breadcrumbs. Heat butter in a large skillet over medium heat, then pan-fry croquettes until golden and crispy, approximately 3 to 4 minutes per side.
  • Combine the rest of the condensed soup, milk, and 1/8 tablespoon poultry seasoning in a small saucepan over low heat. Stir occasionally until the sauce is warmed through. Pour it over the croquettes before serving.
