Spicy pepper sauce with a twist - featuring fresh dates. An essential condiment in Cameroon, each homemade batch is a delicious and unique delight.
Ingredients:
  • 10 fresh hot chile peppers, stems removed
  • 1 onion, coarsely chopped
  • 0.25 cup pitted fresh dates, or more to taste
  • 0.25 cup fresh basil leaves
  • 0.25 cup fresh parsley leaves
  • 1 roma (plum) tomato, roughly chopped
  • 2 tablespoons beef bouillon powder
  • 4 garlic cloves
  • 0.5 cup vegetable oil, or as needed
  • salt to taste
  • 1 squeeze lemon juice
Instructions:
  • Combine peppers, onion, dates, basil, parsley, tomato, bouillon powder, and garlic in a food processor; drizzle with oil. Pulse until finely chopped, adding more oil to reach desired consistency; season with salt.
  • Transfer the pepper mixture to a small saucepan and bring it to a boil. Add freshly squeezed lemon juice, lower the heat, and let it simmer for 15 minutes.
  • Once the pepper mixture has cooled, transfer it into a glass jar with a lid and refrigerate to store the pepper sauce.
