Whip up a zesty marinade with ginger, orange marmalade, mustard, and beer for a flavorful roast that serves a crowd.
Ingredients:
  • 3 teaspoons grated fresh ginger root
  • 0.33333334326744 cup orange marmalade
  • 4 cloves garlic, minced
  • 3 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 0.25 teaspoon hot pepper sauce
  • 1 tablespoon mustard powder
  • 1 cup beer
  • 1 (8 pound) prime rib roast
  • 0.25 cup olive oil
  • freshly ground black pepper
Instructions:
  • Combine ginger, marmalade, garlic, soy sauce, brown sugar, hot sauce, and mustard, then mix in the beer. Prick holes all over the roast with a fork. Pour the marinade over the roast, cover, and refrigerate for at least 2 hours, basting twice.
  • Preheat your oven to 400°F (200°C) for a perfect bake.
  • Place the roast on a rack in a roasting pan and pour 1 cup of marinade into the pan, discarding the rest. Drizzle olive oil over the roast and season with freshly ground black pepper. Insert a roasting thermometer into the middle of the roast, ensuring it doesn't touch any bone. Cover the pan with aluminum foil, sealing the edges tightly.
  • Roast in the preheated oven for 1 hour. Uncover, baste, reduce heat to 325°F (165°C), and roast for an additional hour until desired doneness. Rest covered in foil for 30 minutes before slicing.
