Experience-honed tips elevate humble roast potatoes to perfection in this ultimate recipe for a truly luxurious dish.
Ingredients:
  • 2.5 kg medium Maris Piper potatoes
  • 4 tablespoons goose fat or unsalted butter
  • olive oil
  • 1 bulb of garlic
  • ½ a bunch fresh sage (15g)
Instructions:
  • GET AHEAD - Peel the potatoes, keeping them whole and about 8cm in size. Parboil in boiling salted water for 15 minutes to achieve fluffy insides. - Drain in a colander for 2 minutes to remove excess moisture. Lightly shake the colander to rough up the potato edges for a crisp exterior. - In a large roasting tray, combine goose fat or butter with oil. Add potatoes, season with salt and pepper, toss to coat, and spread in a single layer with small gaps. Refrigerate overnight. ON THE DAY - Preheat oven to 180°C/350°F/gas 4. - Squash garlic bulbs and crush unpeeled cloves. Add to tray for caramelized garlic flavor. - Roast for 1 hour until potatoes are golden and crispy. - Remove from oven and gently squash each potato with a fish slice to fill the tray. - Toss sage leaves with oil for crispiness and flavor. Sprinkle over potatoes and roast for 20-25 minutes until golden. Serve and enjoy!
