Easy and rich snowball cookies, buttery and melt-in-your-mouth festive treats rolled in powdered sugar like snowballs.
Ingredients:
  • 1 cup unsalted butter, softened
  • 0.5 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2.25 cups all-purpose flour
  • 1 cup very finely chopped pecans
  • 0.33333334326744 cup powdered sugar, or more as needed
Instructions:
  • Preheat the oven to 350°F (175°C) for the perfect baking environment.
  • Using an electric mixer, whip together butter, 1/2 cup powdered sugar, and vanilla until creamy in a large bowl. Slowly blend in flour, pecans, and salt until well combined. Shape dough into walnut-sized balls and arrange them 2 inches apart on ungreased baking sheets.
  • Bake in the preheated oven for 12 to 15 minutes until bottoms are light golden brown and tops are still pale. Careful not to overcook - it's better to slightly undercook the cookies.
  • Take the cookies out of the oven and allow them to cool slightly on the baking sheets before transferring them to wire racks.
  • Dust a shallow bowl with 1/3 cup of powdered sugar. Coat hot cookies in the sugar, then cool on wire racks. Once cooled, give them another generous roll in powdered sugar.
