Gluten-free shortbread base topped with zesty lemon filling for a light and refreshing dessert bar.
Ingredients:
  • 1 cup Bisquick™ Gluten Free mix
  • 1/2 cup butter, softened
  • 1/4 cup powdered sugar
  • 1 cup granulated sugar
  • 2 teaspoons grated lemon peel
  • 3 tablespoons fresh lemon juice
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 eggs
  • 2 tablespoons butter, melted
  • Powdered sugar
Instructions:
  • Preheat the oven to 350°F. Combine Bisquick mix, 1/2 cup butter, and 1/4 cup powdered sugar in a medium bowl until mixture becomes crumbly. Press the mixture into the bottom of an ungreased 8-inch square pan. Bake for 20 minutes or until lightly browned.
  • In a medium bowl, combine granulated sugar, lemon peel, lemon juice, baking powder, salt, and eggs. Use an electric mixer on medium speed for about 3 minutes until the mixture is light and fluffy. Mix in the melted butter, then pour the mixture over the hot crust.
  • Bake for 25 to 26 minutes or until the center springs back when lightly touched. Cool in the pan on a rack for about 1 hour. Chill in the refrigerator for 2 hours until cold. Dust with powdered sugar, cut into 4 rows by 4 rows, and store covered in the fridge.
