Party-perfect mini cheesecake cupcakes, great for holiday desserts!
Ingredients:
  • 12 vanilla wafer cookies
  • 2 (8 ounce) packages cream cheese, softened
  • 2 eggs, beaten
  • 0.5 teaspoon vanilla extract
  • 0.75 cup cherry pie filling, or to taste
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and prepare a 12-cup muffin tin with foil cupcake liners.
  • Place a vanilla wafer cookie at the bottom of each cupcake liner for a delicious base.
  • In a bowl, blend cream cheese, sugar, eggs, and vanilla extract until smooth. Spoon over the cookies until liners are 3/4 full.
  • Bake in a sizzling hot oven until the center is almost set and slightly caves in, approximately for 20 minutes.
  • Chill the cupcakes for at least 2 hours. Top each cupcake with a dollop of cherry pie filling.
