Black pepper rice

Spice up your life with a delicious rice side dish!
Ingredients:
  • 1 tsp cumin seeds
  • 60g ghee
  • 1 long green chilli, seeded, finely chopped
  • 12 fresh curry leaves
  • 1 tsp black mustard seeds
  • 3 green cardamom pods, bruised
  • 1/2 tsp freshly ground black pepper
  • 2.40 gm salt
  • 400g basmati rice
  • 625ml water
Instructions:
  • In a large saucepan over medium heat, melt ghee and sauté onions until golden brown, about 8-10 minutes. Add chili, curry leaves, mustard, cumin, cardamom, pepper, and salt. Stir and cook for 1 minute until fragrant. Add rice and stir for another minute to coat. Pour in water, bring to a boil, then reduce heat to low. Cover and simmer for 12 minutes until liquid is absorbed.
  • Allow the mixture to cool covered for 10 minutes, then fluff the grains with a fork and serve promptly.
