Indulgent Northern Italian gnocchi with truffle-infused cheese sauce.
Ingredients:
  • 1 (16 ounce) package cheese gnocchi
  • 0.33333334326744 cup finely chopped shallots
  • 0.33333334326744 cup Pinot Grigio wine
  • 1 clove garlic, finely chopped
  • 0.5 cup salted sweet cream butter
  • 1 teaspoon black truffle oil
  • 1 cup finely grated Grana Padano cheese
  • 1 tablespoon ground black pepper
  • 0.5 teaspoon black truffle salt
  • 3 thin slices shaved black truffle
  • 1 tablespoon Grana Padano cheese, or to taste
  • black sea salt and ground black pepper, to taste
Instructions:
  • Bring a large pot of salted water to a boil. Cook gnocchi until they float to the top, about 2 to 4 minutes. Drain gnocchi, reserving 1/4 cup of cooking water.
  • In a large saute pan, quickly bring shallots and wine to a boil. Lower the heat and let it simmer for 5 to 7 minutes until reduced by half. Drop in butter and swirl until it melts beautifully. Gently mix in truffle oil for the perfect aroma. Toss in reserved cooking water, gnocchi, and Grada Padano cheese, making sure everything is perfectly coated. Cook over medium-low heat until heated through and cheese melts. Finally, sprinkle with pepper and truffle salt, and toss before serving.
  • Transfer the mixture to a large serving bowl, generously sprinkle shaved truffles and the rest of the cheese on top, and season with black sea salt and freshly ground black pepper for added depth of flavor.
