Elevate a berry tart with Betty Crocker™ oatmeal cookie mix, crowned with luscious homemade whipped cream for a showstopping dessert.
Ingredients:
  • 2 cups fresh blackberries
  • 2 cups frozen pitted tart cherries, thawed
  • 1/3 cup packed light brown sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla
  • 1 pouch (17.5 oz) Betty Crocker™ Oatmeal Cookie Mix
  • 1/2 cup cold butter
  • 1/2 cup whipping cream
  • 1 tablespoon granulated sugar
Instructions:
  • Preheat the oven to 400°F. Combine berries, cherries, brown sugar, cornstarch, and vanilla in a 2-quart saucepan. Cook over medium-high heat, stirring occasionally, until the mixture thickens. Let it cool for 15 minutes before using.
  • Place the cookie mix in a medium bowl. Use a pastry blender to cut in the butter, or pull 2 table knives through the mixture until it becomes crumbly. Press 3 1/2 cups of the crumb mixture into the bottom and up the sides of an 11-inch tart pan with a removable bottom. Bake for 6 minutes or until golden. Allow the crust to cool completely on a cooling rack for about 15 minutes.
  • Cover crust with luscious berry mixture, then generously sprinkle the remaining 1/2 cup crumb mixture on top. Bake for 15 to 18 minutes until the filling is bubbly and the topping is a beautiful golden brown. Allow it to cool completely before enjoying.
  • In a chilled bowl, whip the heavy cream and granulated sugar with an electric mixer on high speed until soft peaks form. Unmold the tart from the pan and dollop with the whipped cream.
