Ingredients:
  • 1 vanilla pod
  • 500 g blackberries
  • 100 g caster sugar
  • 1 lemon
  • 330 ml double cream
  • 200 ml fat-free Greek yoghurt
Instructions:
  • Split the vanilla pod and extract the seeds, then combine with 350g of the berries, sugar, and lemon juice in a large pan. Bring to a boil over medium heat and simmer for 3 to 4 minutes until a syrup forms and the berries soften yet remain intact. Let it cool. Whip the cream until peaks form, mix in yogurt, and gently blend in a third of the syrup. Alternate layers of syrup and cream in dessert glasses, topping with syrup and fresh berries to garnish.
