Try this delectable white bean tabbouleh with succulent snapper fillet for a heavenly pairing.
Ingredients:
  • 400g canned cannellini beans, rinsed, drained
  • 1 bunch flat-leaf parsley, leaves roughly chopped
  • 1/2 bunch mint, leaves roughly chopped
  • 3 tomatoes, chopped
  • 1 long red chilli, thinly sliced
  • 36.40 gm olive oil
  • 125ml lime juice
  • 2 tsp ground coriander
  • 4 x 180g skinless snapper fillets
Instructions:
  • Heat the white beans in a small saucepan over low heat for 5 minutes. Combine the beans with parsley, mint, tomatoes, and chili in a bowl. Drizzle with half of the olive oil and 2 tablespoons of lime juice. Mix well.
  • Next, combine the remaining lime juice with ground coriander in a bowl. Coat the snapper fillets by turning them in the mixture.
  • Preheat a large frypan over medium-high heat and add the last tablespoon of olive oil. Once hot, add the snapper and sear for 5 minutes per side until beautifully blackened and perfectly cooked.
  • Divide the flavorful white bean tabbouleh among 4 serving plates and top each with a delicious snapper fillet.
