Light and elegant twist on classic brownies, perfect for teatime.
Ingredients:
  • 125g butter, melted
  • 215.00 gm caster sugar
  • 2 eggs, lightly beaten
  • 4.40 gm vanilla extract
  • 312.50 ml plain flour
  • 1.88 gm bicarbonate soda
  • 1.25 gm ground cinnamon
  • 150g Dark Chocolate Baking Chips
  • 170.00 gm sultanas
  • 125.00 ml dried cranberries
  • 57.50 gm walnuts, coarsely chopped (optional)
Instructions:
  • Combine the butter, sugar, eggs, and vanilla using a whisk until well mixed. Gently stir in the sifted flour, bicarbonate soda, and cinnamon. Carefully fold in the chocolate, dried fruits, and walnuts.
  • Transfer the mixture into a greased and lined 28 × 18cm pan. Bake in a 160C oven for 50-60 minutes until just firm. Let it cool completely in the pan before slicing. Store in an airtight container until needed.
