Blue Cheese Bacon Deviled Eggs

Deviled eggs with mayo, mustard, and crispy bacon - a divine appetizer choice.
Ingredients:
  • 12 eggs
  • 1/2 cup mayonnaise
  • 1/4 cup crumbled blue cheese (1 oz)
  • 1 tablespoon finely chopped green onions (1 medium)
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon freshly ground pepper
  • 1/8 teaspoon salt
  • 3 slices bacon, crisply cooked, crumbled
Instructions:
  • In a 4-quart saucepan or Dutch oven, arrange eggs in a single layer and cover with water. Bring to a boil, then remove from heat and let sit covered for 15 minutes. Drain and rinse with cold water. Transfer eggs to a bowl of ice water and soak for 10 minutes.
  • Gently tap each egg on the countertop until the shell is crackled. Roll the egg between your hands to loosen the shell, then peel starting from the large end under cold running water.
  • Cut the eggs in half lengthwise, remove the yolks and place them in a medium bowl. Mash the yolks with a fork and mix in the mayonnaise, cheese, onions, mustard, pepper, and salt.
  • Fill egg white halves with the creamy yolk mixture and top with crispy bacon. Chill in the fridge for at least 30 minutes before enjoying.
