Child-friendly lunchbox treat the little chefs can make themselves.
Ingredients:
  • 350.00 gm quick-cook oats
  • 250.00 ml sunflower seeds
  • 70g packet dried blueberries
  • 5.00 gm ground cinnamon
  • 80g margarine spread
  • 357.50 gm honey
  • 32.00 gm brown sugar
Instructions:
  • Preheat your oven to 170°C/150°C fan-forced. Lightly grease a 16cm x 26cm slice pan that is 3cm deep and line it with baking paper, leaving a 2cm overhang on the long ends.
  • In a large bowl, combine oats, sunflower seeds, blueberries, and cinnamon. Mix well.
  • In a saucepan over gentle heat, combine spread, honey, and sugar. Stir occasionally for 3 to 4 minutes until everything is melted. Simmer gently, stirring for another 3 minutes until it slightly thickens.
  • Combine the honey mixture with the oat mixture, stirring well. Transfer the mixture to the prepared pan and spread it evenly using damp hands. Bake for 25 to 30 minutes until golden, then allow to cool completely in the pan. Cut into squares, wrap in plastic wrap, and pack in a lunchbox.
