Blueberry crumble bars with a luscious berry filling and buttery oat-cinnamon crust.
Ingredients:
  • 1.5 cups all-purpose flour
  • 1.5 cups quick cooking oats
  • 1.5 cups white sugar, divided
  • 0.5 teaspoon ground cinnamon
  • 0.5 teaspoon baking soda
  • 0.75 cup cold butter
  • 2 cups blueberries
  • 2 tablespoons cornstarch
  • 2 tablespoons lemon juice
Instructions:
  • - Preheat your oven to 375 degrees F (190 degrees C) and generously grease a 9x13-inch baking dish.
  • In a large bowl, mix flour, oats, 1 cup sugar, cinnamon, and baking soda. Add the butter and cut it in using 2 knives or a pastry blender until the mixture looks like coarse crumbs. Set aside about 2 cups for later. Press the remaining oat mixture into the baking dish to make the crust.
  • In a saucepan, mix blueberries, the rest of the sugar, cornstarch, and lemon juice. Bring to a gentle boil while stirring continuously until thickened, around 2 minutes. Pour over the crust and top with the leftover oat mixture.
  • Bake in the preheated oven for about 25 minutes until the topping is lightly browned. Allow to cool completely before slicing into 24 bars.
