Delicious blueberry crumble bars topped with a white glaze. Soft, chewy, crumbly, bursting with blueberry flavor. A crowd-pleaser for all ages.
Ingredients:
  • 1 pouch (17.5 oz) Betty Crocker™ Sugar Cookie Mix
  • 1/2 cup cold butter, cut into pieces
  • 3 cups fresh blueberries
  • 1/2 cup sugar
  • 1/4 cup cornstarch
  • 1 tablespoon finely grated lemon peel
  • 1 tablespoon lemon juice
  • 1 cup powdered sugar
  • 2 tablespoons lemon juice
Instructions:
  • Preheat the oven to 375°F and line a 9-inch square pan with parchment paper.
  • In a large bowl, combine the cookie mix with butter using a pastry blender or fork until crumbly. Set aside 1 cup of the mixture for topping. Press the rest into the bottom of the pan and bake for 15 minutes.
  • Combine the Filling ingredients in a medium bowl. Spread the mixture over the partially baked crust and sprinkle the reserved cookie mixture on top.
  • Bake for 32 to 36 minutes until golden brown and bubbling. Allow to cool for 4 hours, then cut into 16 squares.
  • Whisk powdered sugar and lemon juice in a small bowl until smooth. Drizzle over cooled blueberry crumble bars. Share, enjoy, and refrigerate any leftovers.
