Indulgent blueberry cheesecake bars made with fresh blueberries and cream cheese.
Ingredients:
  • 1.25 teaspoons baking powder
  • 0.5 cup shortening
  • 0.75 cup white sugar
  • 0.75 teaspoon almond extract
  • 0.33333334326744 cup milk
  • 1.5 cups fresh blueberries
  • 0.33333334326744 cup confectioners' sugar
  • 6 tablespoons cream cheese, softened
  • 1 teaspoon almond extract
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and grease a 9-inch square baking dish.
  • In a large bowl, cream together shortening, sugar, one egg, milk, and almond extract until smooth. Gradually mix in flour and baking powder, stirring constantly. Spread the crust evenly in a baking pan and top with blueberries.
  • For the topping, whisk together 2 eggs and cream cheese until creamy. Add powdered sugar and almond extract, then spread over the blueberries.
  • Bake for 55 to 60 minutes until firm to the touch, then allow to cool in the pan before cutting.
