Fresh blueberry syrup infused cake-like brownies with crunchy walnuts for a new dessert twist.
Ingredients:
  • 2.5 cups fresh blueberries, divided
  • 1 teaspoon cinnamon
  • 1.5 sticks butter
  • 1.75 cups white sugar
  • 3 large eggs
  • 1 cup chopped walnuts
  • 1 cup all-purpose flour, or more as needed
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and grease an 8-inch square baking pan.
  • In a large saucepan over medium heat, simmer 2 cups of blueberries. Sprinkle with cinnamon and stir. Mash the berries gently with a fork or potato masher, watching out for any splashes. Continue cooking until a thick syrup forms, about 8 to 10 minutes.
  • Take the blueberries off the heat and mix in the butter until melted. Mix in sugar until combined. Add eggs one at a time once the mixture has cooled slightly, stirring well after each addition. Stir in vanilla extract. Gently fold in walnuts, then fold in flour. Beat the mixture well for 60 to 80 strokes, adding up to 1/4 cup more flour if the batter is too wet. Finally, add the remaining 1/2 cup of blueberries and stir to combine.
  • Gently transfer the batter into the ready baking pan.
  • Bake in the oven until a toothpick comes out clean, about 35 to 40 minutes. Cool completely before cutting and serving.
