Blueberry Buttermilk Scones

Easy homemade blueberry scones - perfect for breakfast or snack.
Ingredients:
  • 4 tablespoons white sugar, divided
  • 0.5 teaspoon ground nutmeg
  • 0.5 cup butter, cut into chunks
  • 1 cup fresh blueberries
  • 0.75 cup buttermilk
  • 1 egg white, lightly beaten
  • 1 tablespoon powdered sugar, or to taste
Instructions:
  • Preheat the oven to 425°F (220°C) and lightly grease 2 baking sheets with cooking spray.
  • In a large bowl, combine flour, 3 tablespoons of sugar, baking powder, baking soda, salt, and nutmeg. Using 2 knives or a pastry blender, cut in the butter until the mixture resembles coarse meal. Gently stir in blueberries and buttermilk until just combined.
  • Shape dough into a ball and knead gently on a lightly floured surface for 2 minutes. Roll dough into a 3/4-inch-thick slab, then cut into 3-inch triangles with a sharp knife. Place scones on baking sheets, brush with egg white, and sprinkle with 1 tablespoon sugar.
  • Bake in the oven until golden brown, approximately 15 minutes. Transfer to cooling racks, dust with powdered sugar, and serve warm.
