Creamy maple blueberry bread pudding casserole - perfect for brunch!
Ingredients:
  • 1 loaf rustic white bread, crusts removed, bread cut into 1-inch cubes (about 10 cups)
  • 4 ounces cream cheese, cut into small cubes (about 1 cup)
  • 2 cups fresh or frozen blueberries, divided (if using frozen berries, defrost and drain them first)
  • 8 eggs, beaten
  • 1 1/2 cups milk
  • 1/4 cup melted butter
  • 1/4 cup maple syrup plus more for serving
Instructions:
  • Preheat your oven to 350°F while you grease an 8 or 9-inch square baking dish.
  • Start building delicious layers: Spread half of the bread cubes in the dish, followed by scattering cream cheese cubes and half of the blueberries. Finish off with the rest of the bread cubes and blueberries.
  • In a large bowl, mix together eggs, milk, maple syrup, and melted butter. Pour over the bread mixture. For convenience, cover and refrigerate overnight. Bake the next morning.
  • Bake the dish at 350°F until a knife inserted in the center comes out clean, typically for 1 to 1 hour and 20 minutes. If you see the edges getting too brown, simply cover it with aluminum foil.
  • Let it rest for 10 minutes to enhance flavors. Cut into squares and drizzle with extra maple syrup before serving.
