Blueberry Pierogi

Try a sweet twist on classic Polish pierogi with these delicious blueberry-filled dumplings.
Ingredients:
  • 8 cups all-purpose flour, or more as needed
  • 6 tablespoons unsalted butter
  • 2 cups lukewarm water, or as needed
  • 5 cups fresh blueberries
Instructions:
  • On a tidy work surface, create a well in the center of the flour. Crack eggs into the well, add butter, and drizzle in a small amount of warm water. Blend together, incorporating more water as necessary. Knead thoroughly, adding water gradually. Keep kneading until the dough is soft and smooth, adding more flour sparingly if needed.
  • Sprinkle flour over your work surface. Take a quarter of the dough and roll it out to 1/8 inch thick. Use a glass or round pastry cutter to create circles.
  • Place a teaspoon of blueberries and a sprinkle of sugar onto each dough circle. Fold the dough over to form a half-moon shape, sealing the edges. Set aside on a tea towel and continue with the remaining dough, blueberries, and sugar.
  • - Bring a large pot of salted water to a gentle boil. - Add the pierogi in batches and cook until they float to the surface, around 5 to 7 minutes. - Let them cook for an additional 2 to 3 minutes after they float. - Remove the pierogi with a slotted spoon and drain in a colander.
