Protein-packed blueberry muffins featuring velvety skyr, Icelandic yogurt.
Ingredients:
  • 1 stick unsalted butter, at room temperature
  • 0.5 cup brown sugar, or more to taste
  • 1 (5.3 ounce) container blueberry skyr (such as Siggi's®)
  • 1.5 tablespoons honey
  • 2 large lemons, zested
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1.5 cups frozen blueberries
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and nestle 12 muffin cups with paper liners.
  • Cream butter and sugar with an electric mixer until fluffy. Add eggs one at a time, beating thoroughly after each addition. Stir in blueberry yogurt, honey, and lemon zest.
  • In a separate bowl, mix together flour, baking powder, baking soda, and salt. Gradually add this mixture to the yogurt blend and combine thoroughly. Gently fold the blueberries in with a spatula.
  • Spoon batter evenly into the muffin cups.
  • Bake in the preheated oven for about 25 minutes until a toothpick comes out clean when inserted into the center. Allow to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
