New England Blueberry Slump: Stovetop dessert with juicy blueberries and fluffy dumplings, a refreshing summer treat!
Ingredients:
  • Dumplings:
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon kosher salt
  • 2 tablespoons sugar
  • 2 tablespoons butter
  • 1/3 cup milk
  • Blueberries:
  • 4 cups fresh or frozen blueberries
  • 1/2 cup sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 1/2 teaspoons lemon juice
  • 1 teaspoon lemon zest
  • 1/3 cup water
Instructions:
  • For the dumplings: Combine flour, baking powder, sugar, and salt in a medium bowl. Add small cubed butter and use your hands to mix until it resembles coarse meal. Create a well in the center, pour in milk, and mix with a fork or spoon until dough forms. Shape into a shaggy ball. Avoid kneading or overworking to maintain a tender texture.
  • In a medium saucepan over high heat, combine blueberries, sugar, cinnamon, nutmeg, lemon juice, lemon zest, and water. Stir to coat the berries evenly. Bring to a boil.
  • Drop spoonfuls of dumpling dough onto the boiling blueberry mixture to cover the berries evenly with 6 dumplings.
  • Simmer with a lid on: Reduce the heat to a low simmer and cover the pan. Cook undisturbed for 25 minutes to ensure the dumplings cook up light and fluffy. Avoid uncovering to maintain the necessary steam and pressure inside.
  • Presentation: Divide the mixture into separate bowls and garnish with a scoop of vanilla ice cream or a swirl of whipped cream.
