Bubbling rhubarb-raisin filling topped with sweet batter makes a delicious cobbler.
Ingredients:
  • 4 pounds rhubarb, cut into 1-inch pieces
  • 2 cups white sugar
  • 1.3333333730698 cups raisins
  • 0.25 cup vegetable shortening
  • 0.66666668653488 cup white sugar
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 0.5 teaspoon salt
  • 0.66666668653488 cup milk
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and generously grease a 9x13-inch baking dish.
  • Combine fresh rhubarb with two cups of sugar in a large bowl, then transfer the mixture into the prepared baking dish. Sprinkle the rhubarb with a handful of plump raisins for added sweetness.
  • In a bowl, cream together vegetable shortening and 2/3 cup sugar until fluffy. Mix in eggs one at a time, then add vanilla extract. In another bowl, combine flour, baking powder, and salt. Gradually mix the dry ingredients into the wet ingredients, alternating with milk, until a smooth batter forms. Spread the batter evenly over the fruit in the baking dish.
  • Bake in the oven until the rhubarb filling is bubbling and the topping is golden brown and set, approximately 1 hour.
