Quick and delicious beef stir-fry ready in minutes with a shaking wok technique.
Ingredients:
  • 24.40 gm fish sauce
  • 21.00 gm light soy sauce
  • 7.50 gm caster sugar
  • 2 garlic cloves, finely chopped
  • 600g beef fillet, cut into 2cm pieces
  • 18.20 gm peanut oil
  • Watercress sprigs, to serve
  • Chopped fresh tomato, to serve
  • Red onion wedges, to serve
Instructions:
  • In a medium bowl, mix together the fish sauce, soy sauce, sugar, and garlic. Add the beef and toss to ensure it's coated. Season with pepper, cover, and let marinate for 1 hour.
  • Preheat a wok over high heat. Add half of the oil and heat until it starts to smoke. Stir-fry half of the beef for 1-2 minutes, shaking the wok occasionally, until it's lightly charred but still pink in the center, or to your preference. Transfer to a serving platter. Repeat with the rest of the oil and beef, ensuring the wok is hot between batches. Garnish with watercress, tomato, and onion before serving.
