Savory bolognaise pot pies perfect for dinner, freezer-friendly.
Ingredients:
  • 1 carrot, finely chopped
  • 400g tomato pasta sauce
  • 400g potatoes, peeled and chopped
  • 400g beef mince
  • 8 button mushrooms, finely chopped
  • 40.00 ml grated cheddar cheese
  • 1 onion, finely chopped
  • 41.20 gm milk
  • 20.00 ml chopped basil
Instructions:
  • Preheat the oven grill to medium-high. Heat a non-stick pan over medium-high heat and spritz with olive oil spray. Sauté carrot and onion for 4 minutes until tender. Stir in mince and cook for 5 more minutes until browned. Mix in pasta sauce, mushrooms, and basil. Let it simmer for 10 minutes until slightly reduced.
  • Steam or boil the potatoes until they are soft, approximately 10 minutes. Drain and set aside, keeping them warm.
  • Divide the mince mixture evenly among four 1-cup capacity ramekins. Roughly mash the potato with salt, pepper, cheddar cheese, and milk. Spoon a dollop of the mash on top of each ramekin. Grill for 1 minute until lightly golden. Serve hot.
