Cheesy bolognese bake: Easy prep, delicious weekday meal.
Ingredients:
  • 36.40 gm extra virgin olive oil
  • 1 brown onion, finely chopped
  • 1 carrot, finely chopped
  • 1 celery stalk, finely chopped
  • 1 tsp fresh thyme leaves
  • 2 garlic cloves, crushed
  • 500g beef mince
  • 69.38 gm tomato paste
  • 400g can diced tomatoes
  • 255.00 gm beef stock
  • 300.00 gm cooked long-grain white rice
  • 4 eggs, lightly beaten
  • 40.00 ml fresh flat-leaf parsley leaves, finely chopped
  • 200g packet grated perfect melt blend cheese (see note)
  • Fresh basil leaves, to serve
  • 120g mixed salad leaves, to serve
Instructions:
  • In a large frying pan over medium-high heat, heat oil and sauté onion, carrot, celery, and thyme for 10 minutes until vegetables soften. Then add garlic and mince, and cook for an additional 6 to 8 minutes until browned, breaking up the mince as it cooks.
  • Combine tomato paste, fresh tomatoes, and stock in a pot. Bring to a boil, then lower the heat to medium-low and simmer uncovered for 20 minutes until thickened. Let it cool for 10 minutes before serving.
  • Preheat your oven to 200C/180C fan-forced. Mix together rice, egg, parsley, and 2/3 cup of cheese in a large bowl. Add the mince mixture and stir well. Transfer the mixture to a 7cm-deep, 22cm x 28cm (10-cup-capacity) baking dish. Sprinkle the remaining cheese over the top.
  • Bake until golden and set, about 30-35 minutes. Allow to rest for 10 minutes. Garnish with fresh basil and serve with a side of salad greens.
