Succulent boneless chicken cacciatore, a simple and delicious family favorite with veggies.
Ingredients:
  • 1 tablespoon olive oil
  • 4 skinless, boneless chicken breasts, cubed
  • 4 stalks celery, chopped
  • 1 onion, chopped
  • 1 red bell pepper, chopped
  • 0.5 green bell pepper, chopped
  • 3 cloves garlic, crushed
  • 1 (14.5 ounce) can diced tomatoes
  • 1 cup tomato juice
  • 1 (6 ounce) can tomato paste
  • 2 tablespoons dried parsley
  • 1.5 teaspoons salt
  • 1 teaspoon dried basil
  • 0.5 teaspoon dried oregano
  • 0.5 teaspoon dried marjoram
  • 0.25 teaspoon ground black pepper
Instructions:
  • In a large skillet, heat oil over medium-high heat. Cook chicken until no longer pink in the middle, about 5 to 7 minutes. Add celery, onion, bell peppers, garlic, tomatoes, tomato juice, tomato paste, parsley, salt, basil, oregano, marjoram, and black pepper. Cover and simmer for about 10 minutes until vegetables are tender.
